På denna sida presenterar vi några välkända sudanesiska matrecept. Matrecepten är på lättengelska, så jag tror att många kommer att förstå dem ganska bra och uppskatta den utsökta maten, efteråt (mycket nöje).

MAHSCHI

(Stuffad Tomat med Hackad Beef)


(För 8 portioner)
Maschi is also made with cucumbers. The cucumbers are peeled, cut lengthwise, scooped out, filled and finished as below. You may also use eggplants. Peel small eggplants, remove the tops, scoop out interiors and proceed in the same manner. The cucumber dish is garnished with fresh cucumber slices and the eggplant with tomato and cucumber slices overlapping all around the edge. In a 9-inch skillet:
Saute: 2 Ibs. CHOPPED BEEF 1 tsp. SALT
1/2 tsp. PEPPER
1 tsp. GARLIC POWDER (or 2 cloves mashed)
4 Tbs. CHOPPED FRESH DILL (or 1 tsp. dried dill) in
2 Tbs. SALAD OIL until meat browns.
Add 1 cup COOKED RICE and blend.
Cut a Slit in 8 large TOMATOES (very firm), halfway across the center.
Squeeze at the sides to open the slit.
Scoop out all the flesh from inside of tomatoes with a spoon.
Refill tomato with beef mixture and close the tomato.
Melt 2 Tbs. BUTTER and
2 Tbs. OIL in a large skillet.
Saute the tomatoes carefully in the fat, rolling them gently until they become dark red on all sides. Remove the tomatoes with the oil and place in a casserole or heavy saucepan.
Prepare sauce as follows and pour over the tomatoes:
Combine: 2 6-oz. cans TOMATO PASTE thinned with 2 6 oz. cans WATER
1/2 tsp. SALT
1 tsp. CINNAMON
1 tsp. GARLIC POWDER.
Simmer the tomatoes gently over low flame for 10 to 15 minutes until sauce is cooked.
Remove carefully to a 15-inch round platter.
Surround with raw TOMATOES cut in thick slices.
Top each slice with GREEN OLIVES
If there is more Maschi filling left over after filling the tomatoes place it in a suitable pan and bake it alongside the tomatoes.


SALATET ZABADY BIL AJUR

Cucumber/Yogurt Salad
This is a delightful, refreshing summer salad also popular in Egypt, Turkey and the Balkans. Ingredients
· 2 Cups (16oz/500g) plain yogurt
· 1 Clove garlic, finely minced
· 1 large cucumber, peeled, seeded and shredded or finely diced
· salt and freshly ground pepper
· Method:
1. In a bowl, combine all the ingredients, cover and refrigerate for 2-4 hours.
2. At serving time, taste and adjust the seasoning, then serve immediately

SHORBET ADAS

Lentil Soup
Ingredients
· 2 cups Ads Magroosh (split red lentils)
· 2 quarts stock (either chicken or lamb)
· 2 medium onions
· 1 medium tomato
· 1 medium carrot
· 2 tablespoons finely chopped onions
· 2 tablespoons olive oil
· 2 tablespoons lemon juice
· 2 teaspoons
· Kammun -Cumin
· salt
· pepper

Method
3. Chop the vegetables into medium-size chunks
4. Wash lentils
5. Put stock into a 4-5 quart pot and bring to boil
6. add the onions,carrot,tomato and lentils to stock. lower the heat to simmer and cook for about 1/2 hour or until the lentils are tender 8. Saute the finely chopped onions in the olive oil until they are soft and brown.
9. Add the cumin,lemon juice ,sauted onions, salt and pepper to soup and stir slowly over low heat for about 3 minutes


TAMEEYA

Green Hamburgers
Serves 8
Green hamburgers, are healthy vegetable patties packed with fresh greens and dried beans.
The Tamaaya, or Falafel as it is called in the Middle East and Sudan, is stuffed into pockets of bread along with salad, foul, fried eggplant, potatoes, tahina salad or just by itself. This sandwich may be eaten for breakfast, lunch or dinner. Bought at the Tamaaya Stand, it is wrapped in paper and eaten as one walks down the street. Ingeredients
· 2 cups broken beans (foul madshoosh)
· 1/2 cup finely chopped parsley
· 1/4 cup finely chopped coriander
· 1/4 cup finely chopped dill
· 1 cup finely chopped green onions
· 1/2 cup finely chopped onion (1 small onion)
· 2 tb finely chopped garlic
· 1 1/2 - 2 tsp salt, or to taste
· 1/2 tsp pepper, or to taste
· 1 tsp dry coriander powder
· chili powder (optional)
· sesame seeds
· oil for frying

Method
17. Place the beans in a large bowl of water and rinse several times until the water is clear. Fill the bowl with at least 6 cups of water, cover and allow them to soak for 2 to 3 days.
18. Wash the greens and dry well, this makes them easier to chop. Remove the tough parts of the stem and then finely chop the leaves and the remaining delicate stems.
Measure the greens after they are chopped, but do not pack them down into the cup. 19. Wash the green onions and chop both the white onion part and the green stem.
20. Chop the onion and garlic.
21. Drain the beans and grind very fine. If you are grinding the beans in a food processor, turn the machine on empty and slowly drop through the tube onto the moving blade.
Place the beans in a bowl and set aside. 22. Add the greens, onions and garlic to the processor, blend well.
23. Add the mashed beans to the processor and process until the mixture looks green.
24. Transfer the mixture to a bowl, add the spices and baking soda, mix everything until well blended.
25. Cover the bowl and let sit for at least 30 minutes. The longer the better so the flavors blend.
If you do not cook all the batter, cover and store in the refrigerator.
26. Heat a medium saute pan, when hot add 1/2 inch of oil and heat until it is hot, lower the heat slightly.
27. To shape the patties, take a large soup spoon and fill the bowl of the spoon with some of the batter, pressing it firmly into the spoon. Sprinkle the top with sesame seeds and then push it off the spoon into the hot oil. Fry for 2 to 3 minutes or until it has turned brown. Turn the patties over and cook again 2 to 3 minutes or until brown. Remove from the oil to a paper towel to drain. 28. Don't let the oil get too hot or the crust will get too crisp or if the oil cools down too much,
the patties will soak up too much oil.


MULLAH BAMYAH

Okra /Ladies Fingers
Serves 4-6
Ingredients:
· 2 lb okra(small)
· 1 lb savoury minced beef
· 5 garlic cloves
· 2 cup tomato juice
· cooking oil
· salt,pepper & mixed spices

Method:
29. Lightly fry okra, Crush garlic w/ salt and add to the savoury minced beef.
30. Neatly arrange 1-2 layers of okra in the stewing pot. Cover with the savoury minced beef and top with another layer of okra.
31. Pour seasoned tomato juice over okra and cook over very low heat, until the juice has absorbed .
32. Turn over onto serving dish.


MOLOKHIYA

Green Leaf Vegetable
Serves 3-4
Ingredients
· 2/5 liter of soup ( meat or chicken ).
· One and a half tea spoon of garlic, 2 tea spoons of ground Coriander (Kozbara), and three table spoons of tomato paste.(tomato paste is optional, but preferable). One and a half table spoon of butter (or 2 table spoons of oil).
· Salt, and black pepper.
· The Molokhya, either green or dry.
Steps 33. Add the Molokhya (one bag) to the 2/5 of soup and heat for about 15 minutes on not a very hot level.
34. It is not recommended to steer too much, so the Molokhya doesn't drawn in the bottom. (in case of green Molokhya, not dry)
35. While cooking the Molokhya prepare the ta'leya ( no equivalent English term)
This is how to prepare the ta'leya: 1. In a soup pan, heat the butter, or the oil. (make sure you don't burn the butter).
2. Add the garlic and steer until it gets yellowish, then add the Coriander.
3. Add the tomato paste and steer until it gets brown, but not burned!
4. Add the result to the Molokya and steer slowly.
Notes Some parts of Sudan don't add tomato, some add lemon. The thickness of the Molokhya depends on the person's taste.


KOFTAH

Ground Meat Balls
Serves 8 - 10
Ingredients:
· 2lb beef
· 2 onions
· 1 slice soft bread
· salt,pepper

Method
36. Mince beef and onions twice (till smooth consistency),soak bread in water and add to meat together w/ the seasoning.
37. Mix well and shape into rounds 2-3 inch in diameter.
38. Grill or fry on skewers or in a double grill untill cooked.

FISH PYRAMID WITH GREEN SAUCE

Yield: 8 portions
When a Fish Pyramid with Green Sauce was served to us we thought the dish was such a great idea, we decided to suggest it as an additional dish you may want to serve at your Sudanese dinner. It is very easy to make. It can be served as a salad in place of the Salata.
Combine: 2 Ibs. COOKED FISH, boned and flaked (use haddock, halibut or any white fish)
1 cup CORE of the CABBAGE, sliced very thin.
2 TOMATOES, cut in small cubes.
1/2 tsp. BLACK PEPPER
1 tsp. SALT
2 Tbs. LEMON JUICE
1/4 cup MAYONNAISE or enough to just hold mixture together.
Shape into a pyramid on a 12 inch plate (with hands moistened with water).
Combine: 1/2 cup MAYONNAISE
1/4 cup LEMON JUICE
1/2 tsp. SALT
1/4 tsp. BLACK PEPPER
1/2 cup FRESH CHOPPED DILL or 1 Tbs. dried dill. (If dried dill is used add 1/4 cup chopped parsley to give the sauce its characteristic green color.)
1/4 cup PICKLE RELISH.
Pour the Green Sauce over the pyramid.
Garnish around edge of plate with: 2 HARD BOILED EGGS sliced and
2 TOMATOES cut in slices, alternately overlapping each other around the plate
1/4 cup BLACK OLIVES uniformly placed around the edge of the plate with
4 or 5 PARSLEY SPRIGS.

CREME CUSTARD

Sudanese Caramel Custard
Yield: 1-quart mold
In a 2-quart bowl:
Beat: 8 EGGS with
1 quart MILK and
1/2 cup SUGAR until mixture is frothy.
Add: 1 oz. BUTTER, melted and
1 Tbs. VANILLA (or banana extract if available).
In a 1 1/2-quart (6-cup) star-shaped aluminum cake pan:
Melt 1/2 cup SUGAR and burn to caramel stage.
Rotate the pan to spread caramel all around the sides.
Beat the egg mixture again.
Pour it quickly into the cake pan.
Cover the pan with aluminum foil which has been well buttered on the under side.
Place the pan in a larger pan half filled with water (as you would do a custard).
Bake at 350' for 30 minutes.
Remove cover and test with a silver knife (when it comes out clean, custard is done).
Chill until thoroughly cold.
Turn the CARAMELA out onto a 10 to 12-inch platter.
Garnish with MARASCHINO or CANDIED CHERRIES on top and sides.



Internet In Sudan


SudaNet

Full Internet services are provided by a single ISP - SudaNet which is 35% owned by the PTO Sudatel. The Internet service uses a VSAT system linking to the US via NSN (NSN is a wholly owned subsidiary of Clear Channel Communications, which is a global leader in the out-of-home advertising industry. Clear Channel has radio and television stations and outdoor dislpays in 32 countries around the world. The company owns approximately 830 radio stations and more than 425,000 outdoor displays as well as 19 television stations. NSN - now supporting over 250 VSAT networks worldwide!). SudaNet is planning to open Internet cafes in Khartoum. SudaNet offer two options of connectivity to customers:

1: Dedicated Line.
Dedicated Line connection is useful for corporate that need to access internet most , or all, the day time, when you subscribe for a dedicated line you will also get a Static IP Address , and that allow you to make each of the following with your won network: 1- Web Server 2- Mail Server 3- FTP Server.

2: Zak Service.
SUDANET offer another option very useful for both corporate & individuals seeking very fast speeds of download. Zak connection work in a different procedure than the dial-up access or dedicated line,you need to use a Digital Satellite Dish to receive the data directly and use SUDANET system the same time to send your request through it.

SudaNet offers its customers the following: Subscription Fees for an internet account is 25000SD monthly.
The web marketing is the newest feature SudaNet would like to introduce to the customers.


Telecommunications

The National Council of Telecommunications (NCT) is responsible for regulating the sector, falling under the Ministry of Roads and Communications. The restructuring and liberalization of the national telecom company took place 2 years ago and the national carrier, the Sudan Telecommunications Company - Sudatel was formed. Sudatel is owned privately, with a 20% government share. The government has taken various other measures to deregulate the telecommunication sector and private sector fixed wireless telephone services do exist.

In general however, the major obstacles to connectivity in Sudan still stems from lack of a reliable telecommunication infrastructure across this huge country. With the establishment of Sudatel, plans for digitizing existing analog lines and replacing older unreliable switches with modern high speed switches is underway. Fiber optic links to various regions and within Karthoum have been established.

Networking Centres

The computer centre of the National Research Council (NRC) is active and includes National Documentation Centre (NDC), which is also in the NRC. The University of Gezira established an email service at the Faculty of Medicine in April '96 with support from IDRC's University Partnership Project (UPP) which linked the University with Centre for International Health (CIH) at McMaster University in Canada. The system connects twice daily with the GreenNet Internet gateway in London. The system is available to the University faculties and NGOs such as WHO, Agricultural Research Corporation (ARC), Omdurman Childrens' Hospital, Wad Medani Teaching Hospital.

Relevant Departments at the University are: Faculty of Postgraduate Studies, Faculty of Science, Faculty of Education, School of Extramural Studies, Institute of African and Asian Studies, Development Studies and Research Center, Sudan University for Science and Technology, Khartoum.


University of Gezira

A fidonet node was installed on May 1, 1996, at University of Gezira, Wad Medani, Sudan. GreenNet in London polls the Gezira node twice a day and passes messages to and from the Internet. There are plans to extend the service to other universities in Sudan. McMaster University in Canada is helping with these efforts as part of the University Partnerships Project (UPP). The University of Gezira operates an email service.


HealthNet Sudan

The HealthNet node in Sudan is based at the University of Khartoum, and uses SatelLife's low earth-orbiting satellite to transmit and receive messages. The Network contains Faculty of Medicine,Faculty of Dentistry, Sudanese Islam Medical Association (SIMA),AIDS Program (SNAP), Ministry of Health,National Health Laboratory.

SHOW-NET

SHOW-NET is a company engaged in offering advanced Internet solutions in Sudan via satellite. SHOW-NET has established its Network Operation Center in London. The Network Operation Center receives all requests for data from the end user through the local Internet Service Provider (ISP). Requested data is retrieved from the Internet, brought to the NOC and uplinked to the satellite for transmission to the user.

The satellite engaged by SHOW-NET for transmission of data and multimedia content is Nilesat. Present coverage area includes the whole of the Middle East and part of Africa. Sesat will be included shortly to cover Asia and part of CIS. The users need to install a Ku band dish antenna and SHOW-NET PC card in the PCI slot of their computers.

SHOW-NET's main target is to present Sudan for the rest of the world in the net, They have designers in web page design and graphics. Their Services Include:
